Over the last six months or so I've burned through all of these:
Skyrim
SWTOR
Mass Effect 3
Borderlands
Fallout: New Vegas (and most of the DLC)
What should I put on the chopping block next? Is any of the Borderlands DLC any good?

Not in the least. In fact, I'd recommend skipping it.
You are a (semi) terrible person.
The Witcher had its share of issues (though most of the major technical ones were fixed by the time EE came out), but it's absolutely worth playing if story, character, and setting are things you care about in an RPG. Because while The Witcher 2 is a much more polished game (and one that I love dearly), The Witcher 1 still excels when it comes to those aspects.

If you haven't played Dragon Age: Origins, I recommend it. It's really good and there's a ton of content. Skip DA2 though, that game is rubbish.

Fallout New Vegas Ultimate Edition is only $29.99 at some retail places, so I'm guessing it is even less on digital services. I've been gradually replaying the main campaign on Hardcore mode and it is great. It takes everything that was good about Fallout 3 and completely eliminate the annoying crap (too much sewer traversal, bobble heads, morality is replaced with faction allegiance, etc).

Haven't played Witcher 2 but at nearly three chapters into the first one, I'd highly recommend it.

The first Witcher is only ten smackers on Steam. The second one is still fifty.

Not really, world traversal is handled by way of an overworld map. You're party travels between locations on the map and can run into random (and not so random) encounters. Some of the actual levels are pretty big though, particularly the cities you go to.

If you want open-wordly, you should know The Witcher only somewhat fits that description. You roam freely in fairly large areas, but they change from chapter to chapter.
